- 4 soft-shell crabs, cleaned
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 4 cups vegetable oil, for frying
- 4 hamburger buns, split and toasted
- 4 leaves lettuce
- 4 slices tomato
- 1/2 cup tartar sauce
Instructions
- Place cleaned soft-shell crabs in a shallow dish and pour buttermilk over them. Let soak for 10 minutes.
- In a shallow bowl, whisk together flour, salt, black pepper, paprika, and cayenne.
- Heat oil in a deep skillet or Dutch oven to 350°F (175°C).
- Dredge each crab in the seasoned flour, shaking off excess.
- Fry crabs in batches, 2 at a time, for 2-3 minutes per side until golden brown and crispy. Drain on paper towels.
- Spread tartar sauce on the bottom half of each toasted bun. Top with lettuce, tomato slice, and a fried crab. Cover with bun top.
- Serve immediately.
