Ingredients
1 lb boneless skinless chicken breasts, cut into 4 pieces
1 cup buttermilk
1 tsp hot sauce (e.g., Tabasco)
1 cup all-purpose flour
1 tbsp paprika
1 tsp cayenne pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1/2 tsp black pepper
Vegetable oil for frying
4 hamburger buns
4 slices dill pickle
1/4 cup mayonnaise
Instructions
Pound chicken pieces to even thickness (about 1/2 inch). In a bowl, mix buttermilk and hot sauce; add chicken, cover, and refrigerate for at least 30 minutes (or up to 4 hours).
In a shallow dish, combine flour, paprika, cayenne, garlic powder, onion powder, salt, and pepper.
Heat 1 inch of oil in a deep skillet to 350°F (175°C).
Remove chicken from buttermilk, letting excess drip off. Dredge in seasoned flour, pressing firmly to coat. Shake off excess.
Fry chicken in batches for 4-5 minutes per side, until golden brown and cooked through (internal temp 165°F). Drain on paper towels.
Toast buns lightly. Spread mayonnaise on bottom buns. Place chicken patty on each, top with a pickle slice, and close with top bun.
Tips
For extra heat, add more cayenne or a dash of chili powder to the flour.
Leftover chicken patties can be reheated in a 350°F oven for 5-10 minutes.
