  1. Rinse sushi rice in cold water until water runs clear. Combine rice and water in a saucepan; bring to a boil. Reduce heat, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 10 minutes.
  2. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Fold into cooked rice using a wooden spatula. Fan the rice to cool it to room temperature.
  3. In another small bowl, mix mayonnaise and sriracha to make spicy mayo. Set aside.
  4. Place a sheet of nori on a bamboo mat (or plastic wrap). Spread about 1/2 cup of rice evenly over nori, leaving a 1-inch strip at the top edge. Sprinkle sesame seeds on rice if using.
  5. Lay 2 avocado strips, 2 cucumber strips, and 2 imitation crab sticks horizontally across the center of the rice. Drizzle with spicy mayo.
  6. Using the mat, lift the edge of the nori and roll tightly away from you, pressing gently to seal. Moisten the top strip of nori with water to seal the roll.
  7. Repeat with remaining ingredients to make 4 rolls. Using a sharp knife, slice each roll into 8 pieces. Serve with soy sauce, pickled ginger, and wasabi.
