1 cup whole spelt grains
3 cups water or milk (or a mix)

Instructions
Rinse the spelt grains under cold water and drain.
In a medium saucepan, combine spelt, water or milk, and salt. Bring to a boil over high heat.
Reduce heat to low, cover, and simmer for 25-30 minutes, stirring occasionally, until the spelt is tender and the porridge has thickened.
Stir in maple syrup or honey and cinnamon if using.
