Ingredients
1 cup spelt berries
3 cups water
1/2 teaspoon salt
1 cup mixed fresh berries (strawberries, blueberries, raspberries)
1/4 cup crumbled feta cheese
1/4 cup chopped fresh mint
2 tablespoons extra-virgin olive oil
1 tablespoon lemon juice
1 teaspoon honey
1/4 teaspoon black pepper
Instructions
Rinse spelt berries under cold water. In a medium saucepan, combine spelt berries, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes until tender but chewy. Drain any excess water and let cool to room temperature.
While spelt cools, prepare the dressing: In a small bowl, whisk together olive oil, lemon juice, honey, and black pepper.
In a large bowl, combine cooled spelt berries, mixed berries, feta cheese, and mint.
Pour dressing over salad and toss gently to combine. Serve immediately or refrigerate for up to 2 hours before serving.
Tips
For a vegan version, omit feta or use vegan feta.
Add chopped nuts like almonds or walnuts for extra crunch.
