Ingredients
400g spaghetti
2 tbsp extra virgin olive oil
4 cloves garlic, thinly sliced
800g canned whole peeled tomatoes, crushed by hand
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp red pepper flakes (optional)
1/4 cup fresh basil leaves, torn
Grated Parmesan cheese for serving
Instructions
Bring a large pot of salted water to a boil. Cook spaghetti according to package directions until al dente. Reserve 1 cup pasta water before draining.
While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
Add crushed tomatoes, salt, pepper, and red pepper flakes if using. Bring to a simmer and cook for 10-15 minutes, stirring occasionally, until sauce thickens slightly.
Add drained spaghetti to the sauce along with a splash of reserved pasta water. Toss to coat, adding more pasta water if needed for consistency.
Remove from heat, stir in basil. Serve immediately with Parmesan.
Tips
Use high-quality canned tomatoes for best flavor.
For a smoother sauce, blend the tomatoes before adding.
Leftover sauce can be stored in the refrigerator for up to 3 days.
