Ingredients
1 cup soy protein isolate powder
1 cup rolled oats
1/2 cup natural peanut butter (or other nut butter)
1/3 cup honey or maple syrup
1/4 cup unsweetened applesauce
1/4 cup dark chocolate chips (optional)
1/4 cup ground flaxseed
1/2 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
In a large bowl, combine soy protein powder, rolled oats, ground flaxseed, and salt.
Add peanut butter, honey, applesauce, and vanilla extract. Mix until a thick dough forms. If too dry, add a tablespoon of water; if too wet, add more oats.
Fold in chocolate chips if using.
Line an 8x8-inch pan with parchment paper. Press the mixture firmly into the pan for bars, or roll into 1-inch balls for energy balls.
Refrigerate for at least 30 minutes to set. Cut bars into 12 pieces if using pan.
Store in an airtight container in the refrigerator for up to 2 weeks.
