  2. Add ham hock and water. Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes.
  3. Add collard greens, salt, black pepper, and red pepper flakes. Stir to combine. Cover and simmer for 45 minutes, stirring occasionally, until greens are tender.
  4. Remove ham hock from pot. When cool enough to handle, shred meat from bone, discarding bone and fat. Return meat to pot.
  5. Stir in apple cider vinegar. Taste and adjust seasoning. Serve hot with pot liquor (cooking liquid).
