Ingredients
- 2 tablespoons unsalted butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (28-ounce) can crushed tomatoes
- 2 cups vegetable broth
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup heavy cream
- 2 tablespoons fresh basil, chopped
Instructions
- In a large pot, melt butter over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Stir in crushed tomatoes, vegetable broth, sugar, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Use an immersion blender to puree the soup until smooth. (Alternatively, let cool slightly and blend in batches in a blender.)
- Stir in heavy cream and basil. Heat through, about 2 minutes. Adjust seasoning to taste.
- Ladle into bowls and serve hot.
Tips
- For a vegan version, use olive oil instead of butter and coconut cream instead of heavy cream.
- Soup can be stored in the refrigerator for up to 5 days or frozen for 3 months.
- Garnish with extra basil or croutons if desired.
