Ingredients
1 1/2 cups warm water (110°F)
1 tablespoon granulated sugar
2 teaspoons active dry yeast
4 cups all-purpose flour
2 teaspoons salt
2 tablespoons unsalted butter, melted
1/4 cup baking soda
1 large egg, beaten with 1 tablespoon water
Coarse sea salt for topping
1/4 cup yellow mustard
1/4 cup honey
Instructions
In a large bowl, combine warm water, sugar, and yeast. Let stand for 5 minutes until foamy.
Add flour, salt, and melted butter. Mix until a dough forms. Knead on a floured surface for 5-7 minutes until smooth and elastic.
Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour until doubled.
Preheat oven to 450°F. Line two baking sheets with parchment paper.
Punch down dough and divide into 8 equal pieces. Roll each into a 24-inch rope. Shape into a pretzel by forming a U, crossing the ends, and pressing them onto the bottom of the U.
In a large pot, bring 10 cups of water to a boil. Add baking soda (carefully, it will bubble up). Boil each pretzel for 30 seconds per side. Remove with a slotted spoon and place on prepared baking sheets.
Brush each pretzel with egg wash and sprinkle with coarse salt.
Bake for 12-15 minutes until deep golden brown. Let cool on a wire rack for 5 minutes.
Mix mustard and honey in a small bowl. Serve pretzels warm with honey mustard dip.
Tips
For a more authentic flavor, use pretzel salt or kosher salt.
Pretzels are best served fresh but can be stored in an airtight container for up to 2 days.
