Ingredients
2 large yellow onions, roughly chopped
1 green bell pepper, seeded and roughly chopped
1 red bell pepper, seeded and roughly chopped
6 cloves garlic, peeled
1 bunch fresh cilantro (about 1 cup packed), stems included
1 bunch fresh culantro (or 2 tbsp dried culantro or extra cilantro), roughly chopped
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon dried oregano
Instructions
Place all ingredients in a food processor or blender. Pulse until a smooth paste forms, scraping down sides as needed. If too thick, add a tablespoon of water.
Transfer to a jar or airtight container. Use immediately or refrigerate for up to 1 week, or freeze in ice cube trays for longer storage.
Tips
For a milder sofrito, remove seeds from bell peppers.
Use as a base for rice, beans, soups, or stews by sautéing 2-3 tablespoons in oil before adding other ingredients.
