Ingredients
2 cups chocolate cookie crumbs
1/2 cup unsalted butter, melted
3 (8 oz) packages cream cheese, softened
1 cup creamy peanut butter
1 cup granulated sugar
1 teaspoon vanilla extract
1 cup heavy cream
1/2 cup caramel sauce, plus more for drizzling
1/2 cup chopped roasted peanuts
1/2 cup mini chocolate chips
1/2 cup chopped Snickers bars (optional, for topping)
Instructions
In a medium bowl, combine chocolate cookie crumbs and melted butter. Press firmly into the bottom of a 9-inch springform pan. Refrigerate while preparing filling.
In a large bowl, beat cream cheese, peanut butter, sugar, and vanilla extract until smooth and creamy.
In a separate bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into cream cheese mixture until well combined.
Spread half of the filling over the crust. Drizzle with 1/4 cup caramel sauce, sprinkle with chopped peanuts and mini chocolate chips. Spread remaining filling on top.
Smooth the top, then drizzle with remaining caramel sauce. Sprinkle with additional peanuts, chocolate chips, and chopped Snickers bars if desired.
Refrigerate for at least 6 hours or overnight until set. Run a knife around the edge before releasing the pan. Slice and serve.
Tips
For a cleaner slice, dip a knife in hot water and wipe dry before each cut.
Store leftovers in the refrigerator for up to 5 days.
The cheesecake can be frozen for up to 1 month; thaw in the refrigerator overnight.
