Ingredients
1 cup unsalted butter
2 cups granulated sugar
4 large eggs
1 tsp vanilla extract
1 cup all-purpose flour
3/4 cup unsweetened cocoa powder
1/2 tsp salt
1 cup semisweet chocolate chips
1 cup caramel sauce (store-bought or homemade)
1 cup roasted salted peanuts, roughly chopped
1 cup milk chocolate chips
1/2 cup heavy cream
Instructions
Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.
Melt butter in a large saucepan over medium heat. Remove from heat and stir in sugar, eggs, and vanilla until smooth.
Sift in flour, cocoa powder, and salt; stir until just combined. Fold in semisweet chocolate chips.
Pour batter into prepared pan and spread evenly. Bake for 25-30 minutes, until a toothpick inserted in center comes out with moist crumbs. Cool completely.
Spread caramel sauce over cooled brownies, then sprinkle with chopped peanuts.
In a small saucepan, heat heavy cream until simmering. Pour over milk chocolate chips in a bowl; let sit 1 minute, then stir until smooth.
Pour chocolate ganache over the caramel-peanut layer and spread evenly. Refrigerate for at least 1 hour until set.
Cut into squares and serve.
Tips
For easier cutting, refrigerate brownies for 30 minutes before slicing.
Store in an airtight container in the refrigerator for up to 5 days.
Warm brownies slightly before serving for a gooey texture.
