Ingredients
4 large eggs
2 tablespoons heavy cream or milk
1 tablespoon unsalted butter
2 ounces smoked salmon, cut into small pieces
1 tablespoon fresh dill, chopped
Salt and freshly ground black pepper to taste
Optional: 1 tablespoon cream cheese, softened
Instructions
In a medium bowl, whisk together eggs, heavy cream, and a pinch of salt and pepper until well combined.
Melt butter in a nonstick skillet over medium-low heat. Add the egg mixture and let it set for about 30 seconds, then gently stir with a rubber spatula, pushing the eggs from the edges toward the center.
Continue cooking, stirring occasionally, until the eggs are softly set but still creamy, about 2-3 minutes.
Remove the skillet from heat. Gently fold in the smoked salmon and dill (and cream cheese if using) until just combined. The residual heat will warm the salmon.
Serve immediately, garnished with extra dill if desired.
