Ingredients
1 lb ground beef
4 slices bacon, chopped
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped celery
1 cup ketchup
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon yellow mustard
Salt and pepper to taste
4 hamburger buns, split and toasted
1/2 cup crushed potato chips (optional)
Instructions
In a large skillet over medium heat, cook bacon until crispy. Remove bacon with a slotted spoon and set aside, leaving drippings in skillet.
Add ground beef to the skillet and cook until browned, breaking it up with a spoon. Drain excess fat.
Add onion, bell pepper, and celery to the skillet. Cook until vegetables are tender, about 5 minutes.
Stir in ketchup, brown sugar, Worcestershire sauce, mustard, salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally, until thickened.
Stir in half of the cooked bacon. Spoon the mixture onto the bottom halves of the toasted buns. Top with remaining bacon and crushed potato chips if desired. Cover with bun tops and serve.
Tips
For extra crunch, add shredded lettuce or pickles.
