Ingredients
1 tbsp olive oil
1 small onion, diced
1 green bell pepper, diced
2 cloves garlic, minced
8 oz cremini mushrooms, finely chopped
1 cup cooked brown lentils (or 1 can, drained and rinsed)
1 cup tomato sauce
2 tbsp tomato paste
1 tbsp maple syrup or brown sugar
1 tbsp apple cider vinegar
1 tbsp soy sauce or tamari
1 tsp smoked paprika
1/2 tsp chili powder
Salt and black pepper to taste
4 hamburger buns, toasted
Instructions
Heat olive oil in a large skillet over medium heat. Add onion and bell pepper; cook until softened, about 5 minutes.
Add garlic and mushrooms; cook until mushrooms release their liquid and start to brown, about 5-7 minutes.
Stir in lentils, tomato sauce, tomato paste, maple syrup, apple cider vinegar, soy sauce, smoked paprika, and chili powder. Bring to a simmer.
Reduce heat to low and let simmer for 10-15 minutes, stirring occasionally, until thickened. Season with salt and pepper to taste.
Serve heaped on toasted hamburger buns.
Tips
For extra protein, add 1/2 cup cooked crumbled tofu or tempeh with the lentils.
