Add garlic and cook for 1 minute.
Stir in ketchup, brown sugar, Worcestershire sauce, mustard, salt, and pepper. Reduce heat to low and simmer for 5 minutes, stirring occasionally.
Spread half of the tortilla chips in a single layer on a large oven-safe platter or baking sheet. Spoon half of the Sloppy Joe mixture over chips, then sprinkle with half of the cheese. Repeat layers with remaining chips, Sloppy Joe mixture, and cheese.
Bake for 8-10 minutes until cheese is melted and bubbly.
Top with desired toppings and serve immediately.

For extra crunch, use thick-cut restaurant-style tortilla chips.
You can substitute ground turkey or chicken for the beef.
Leftover Sloppy Joe mixture can be refrigerated for up to 3 days.
