Ingredients
1 lb sirloin steak, about 1 inch thick
2 tbsp olive oil
1 large onion, thinly sliced
2 cloves garlic, minced
1 tsp dried thyme
Salt and black pepper to taste
4 crusty rolls or baguette pieces, split
4 slices provolone cheese
2 tbsp butter, softened
1 tbsp Dijon mustard (optional)
Instructions
Season the sirloin steak generously with salt and pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the steak and cook for 4-5 minutes per side for medium-rare, or to desired doneness. Transfer to a cutting board and let rest for 5 minutes, then slice thinly against the grain.
In the same skillet, reduce heat to medium and add remaining 1 tablespoon olive oil. Add the sliced onion and cook, stirring occasionally, until golden and caramelized, about 10 minutes. Add garlic and thyme, cook for 1 minute more. Season with salt and pepper.
Preheat broiler. Spread cut sides of rolls with butter and place on a baking sheet. Broil until lightly toasted, about 1 minute. If using, spread Dijon mustard on the bottom halves.
Divide the sliced steak among the bottom halves of the rolls. Top with caramelized onions and a slice of provolone cheese. Place under broiler just until cheese melts, about 30 seconds.
Close sandwiches with top halves and serve immediately.
Tips
For extra flavor, marinate the steak in Worcestershire sauce and garlic for 30 minutes before cooking.
