- 2 cups bean sprouts
- 4 oz (115g) cooked shrimp, peeled
- 4 oz (115g) Chinese BBQ pork (char siu), thinly sliced
- 2 tablespoons curry powder
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 1 teaspoon sugar
- 2 green onions, sliced
- Lime wedges for serving
Instructions
- Soak rice vermicelli in warm water for 10 minutes until softened, then drain well.
- Heat oil in a wok or large skillet over high heat. Add garlic and shallot, stir-fry for 30 seconds.
- Add bell pepper and bean sprouts, stir-fry for 1 minute.
