Ingredients
2 medium zucchinis, sliced into 1/2-inch rounds
1 red bell pepper, seeded and cut into 1-inch pieces
1 yellow bell pepper, seeded and cut into 1-inch pieces
1 red onion, cut into 1/2-inch wedges
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh lemon juice
1 tablespoon chopped fresh parsley
1 teaspoon chopped fresh thyme
Instructions
Preheat grill to medium-high heat (about 400°F).
In a large bowl, combine zucchini, bell peppers, and red onion. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat.
Place vegetables on the grill in a single layer. Grill for 4-5 minutes per side, until tender and charred.
