Ingredients
2 large organic lemons
1/2 small red onion, thinly sliced
2 tablespoons extra-virgin olive oil
1 tablespoon fresh parsley, chopped
1 tablespoon fresh mint, chopped
1/2 teaspoon flaky sea salt
1/4 teaspoon black pepper
1/4 teaspoon sugar
Instructions
Wash the lemons thoroughly. Using a mandoline or very sharp knife, slice the lemons paper-thin, including the peel. Remove any seeds as you go.
Place the lemon slices in a bowl and add the thinly sliced red onion.
In a small bowl, whisk together olive oil, salt, pepper, and sugar. Pour over the lemon mixture and toss gently to coat.
Let the salad sit for 5-10 minutes to allow flavors to meld. Just before serving, sprinkle with chopped parsley and mint.
Taste and adjust seasoning if needed. Serve at room temperature.
