1 lb boneless skinless chicken thighs, cut into bite-sized pieces
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
1/4 cup cornstarch
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon white pepper
2 large eggs, beaten
1/4 cup vegetable oil, for frying
1/4 cup honey
2 tablespoons ketchup
1 tablespoon brown sugar
1 tablespoon soy sauce (for sauce)
1 teaspoon minced garlic
1 teaspoon grated ginger
1 tablespoon toasted sesame seeds
2 green onions, sliced
Instructions
In a bowl, combine chicken with 2 tablespoons soy sauce, rice vinegar, and sesame oil. Marinate for 10 minutes.
In a separate bowl, mix cornstarch, flour, salt, and white pepper. Dip marinated chicken pieces into beaten eggs, then coat with the flour mixture.
Heat vegetable oil in a large skillet over medium-high heat. Fry chicken in batches until golden brown and cooked through, about 4-5 minutes per batch. Drain on paper towels.
In a small bowl, whisk together honey, ketchup, brown sugar, 1 tablespoon soy sauce, garlic, and ginger.
Pour the sauce into the skillet and bring to a simmer over medium heat. Cook for 1-2 minutes until slightly thickened.
Add the fried chicken to the skillet and toss to coat evenly with the sauce. Sprinkle with sesame seeds and green onions. Serve immediately.

For extra crispiness, double-fry the chicken: fry once at 325°F for 3-4 minutes, let rest, then fry again at 375°F until golden.
