Ingredients
4 large russet potatoes (about 2 lbs)
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
Optional: 1/4 teaspoon cayenne pepper
Instructions
Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Scrub potatoes and cut into 1/4-inch thick sticks. Place in a large bowl of cold water and soak for 10 minutes. Drain and pat dry thoroughly with a clean kitchen towel.
In a small bowl, mix garlic powder, onion powder, paprika, oregano, thyme, salt, black pepper, and cayenne if using.
In a large bowl, toss the dried potato sticks with olive oil and the spice mixture until evenly coated.
Spread the fries in a single layer on the prepared baking sheet, ensuring they are not overlapping.
Bake for 15 minutes, then flip the fries with a spatula. Bake for another 10-15 minutes until golden brown and crispy.
Serve immediately with ketchup or your favorite dipping sauce.
Tips
For extra crispiness, soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to restore crispiness.
