Ingredients
1/2 cup rolled oats
1 cup water or low-sodium vegetable broth
1/4 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon unsalted butter or olive oil
1 large egg
1 tablespoon grated Parmesan cheese (optional)
1 tablespoon chopped fresh chives or green onions
Instructions
In a small saucepan, bring water or broth to a boil. Add oats and salt, reduce heat to medium-low, and cook, stirring occasionally, until oats are tender and liquid is absorbed, about 5 minutes.
Stir in black pepper and half of the butter or oil. Transfer oatmeal to a bowl.
In a nonstick skillet, heat remaining butter or oil over medium heat. Crack egg into skillet and cook until white is set and yolk is still runny, about 3 minutes, or to your liking.
Place fried egg on top of oatmeal. Sprinkle with Parmesan (if using) and chives. Serve immediately.
Tips
For extra flavor, add a pinch of red pepper flakes or garlic powder to the oatmeal while cooking.
You can substitute the egg with a poached or soft-boiled egg.
Leftover oatmeal can be reheated with a splash of water or broth.
