Ingredients
1/2 cup rolled oats
1 cup water or vegetable broth
1/4 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon olive oil, divided
1/4 cup diced onion
1/4 cup diced bell pepper
1/4 cup chopped spinach
1 large egg
1 tablespoon grated Parmesan cheese (optional)
1 teaspoon chopped fresh parsley (optional)
Instructions
In a small saucepan, combine oats, water or broth, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 5-7 minutes, stirring occasionally, until creamy.
While oatmeal cooks, heat 1/2 tablespoon olive oil in a non-stick skillet over medium heat. Add onion and bell pepper; sauté for 3-4 minutes until softened. Add spinach and cook until wilted, about 1 minute. Remove vegetables from skillet and set aside.
In the same skillet, add remaining 1/2 tablespoon olive oil. Crack the egg into the skillet and cook to your preference (sunny-side up or over easy).
