Ingredients
1/2 cup rolled oats
1 cup water or vegetable broth
1/4 teaspoon salt
1 tablespoon olive oil
1 large egg
1 cup fresh spinach or kale
1 clove garlic, minced
1 tablespoon soy sauce or tamari
1 teaspoon sesame seeds
1 green onion, sliced
Instructions
In a small saucepan, combine oats, water or broth, and salt. Bring to a boil, then reduce heat to low and simmer for 5 minutes, stirring occasionally, until thick and creamy.
While oats cook, heat 1/2 tablespoon olive oil in a non-stick skillet over medium heat. Crack the egg into the skillet and cook until the white is set but yolk is still runny, about 3-4 minutes. Season with a pinch of salt.
In the same skillet, add remaining 1/2 tablespoon olive oil and minced garlic. Sauté for 30 seconds until fragrant. Add spinach or kale and cook until wilted, about 2 minutes.
Pour the cooked oatmeal into a bowl. Top with sautéed greens and the fried egg. Drizzle with soy sauce, sprinkle with sesame seeds and sliced green onion.
Serve immediately, breaking the yolk to mix into the oatmeal.
Tips
For extra protein, add crumbled cooked bacon or a spoonful of miso paste stirred into the oats.
Swap soy sauce for sriracha or chili oil for a spicy kick.
