Ingredients
1 cup rolled oats
2 cups water or vegetable broth
1 tablespoon olive oil
1 small onion, diced
1 clove garlic, minced
1 cup chopped spinach
1/2 cup cherry tomatoes, halved
2 large eggs
2 tablespoons soy sauce (or tamari)
1 tablespoon sesame seeds
Salt and pepper to taste
Optional: sliced green onions for garnish
Instructions
In a medium saucepan, bring water or broth to a boil. Add oats, reduce heat to low, and cook for 5 minutes, stirring occasionally, until thick and creamy. Season with a pinch of salt.
While oats cook, heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until soft, about 3 minutes.
Add spinach and cherry tomatoes to the skillet, cook until spinach wilts and tomatoes soften, about 2 minutes. Season with salt and pepper.
In a small pot, bring water to a gentle boil. Carefully add eggs and cook for 6-7 minutes for a soft-boiled yolk. Transfer to ice water, then peel and halve.
Divide oatmeal between two bowls. Top with sautéed vegetables and a soft-boiled egg half. Drizzle with soy sauce, sprinkle sesame seeds, and garnish with green onions if desired.
Tips
For a vegan version, omit the egg and add a spoonful of nutritional yeast or crispy tofu.
Use leftover roasted vegetables for a quicker prep.
