Ingredients
1 cup rolled oats
1/2 cup raw pumpkin seeds
1/2 cup raw sunflower seeds
1/4 cup sesame seeds
1/4 cup flax seeds
1/4 cup olive oil
2 tablespoons soy sauce
1 tablespoon maple syrup
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper (optional)
Instructions
Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
In a large bowl, combine oats, pumpkin seeds, sunflower seeds, sesame seeds, and flax seeds.
In a small bowl, whisk together olive oil, soy sauce, maple syrup, smoked paprika, garlic powder, onion powder, and cayenne if using.
Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
Spread the mixture in a thin, even layer on the prepared baking sheet.
Bake for 25-30 minutes, stirring halfway through, until golden and fragrant. Let cool completely on the baking sheet; it will crisp up as it cools.
Break into clusters and store in an airtight container at room temperature for up to 2 weeks.
Tips
Serve over avocado toast, roasted sweet potatoes, or a simple green salad.
Adjust seasoning to taste; add nutritional yeast for a cheesy flavor.
