A comforting Chinese rice porridge, known as congee, is simmered until creamy and topped with savory ingredients for a satisfying meal.

Ingredients
1 cup long-grain white rice, rinsed
8 cups water or low-sodium chicken broth
1 teaspoon salt
1/2 teaspoon white pepper
4 ounces ground pork
1 tablespoon soy sauce
1 teaspoon sesame oil
1 teaspoon grated ginger
2 green onions, sliced
1/4 cup fried shallots
1 tablespoon chopped cilantro
1 teaspoon chili oil (optional)
Instructions
In a large pot, combine rice and water or broth. Bring to a boil over high heat, then reduce to low and simmer, stirring occasionally, for 45-60 minutes until rice is broken down and congee is thick and creamy. Season with salt and white pepper.
While congee cooks, mix ground pork with soy sauce, sesame oil, and ginger. Set aside.
About 10 minutes before congee is done, heat a small skillet over medium-high heat. Add the pork mixture and cook, breaking it up, until browned and cooked through, about 5 minutes.
Ladle congee into bowls. Top with cooked pork, green onions, fried shallots, cilantro, and chili oil if using. Serve hot.
Tips
Stir congee occasionally to prevent sticking and adjust consistency with extra water if too thick.
Leftover congee can be refrigerated for up to 3 days; thin with water when reheating.
For a vegetarian version, omit pork and use vegetable broth; add sautéed mushrooms or tofu.
