Ingredients
1 cup pearl barley, rinsed
2 cups vegetable broth
1 cup water
2 tablespoons olive oil
1 medium onion, diced
2 cloves garlic, minced
2 medium carrots, peeled and diced
2 celery stalks, diced
1 medium potato, peeled and diced
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons unsalted butter
1/4 cup grated Parmesan cheese (optional)
Instructions
In a medium saucepan, combine barley, vegetable broth, and water. Bring to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes until barley is tender and liquid is absorbed.
While barley cooks, heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until softened, about 3 minutes.
Add carrots, celery, and potato to the skillet. Cook, stirring occasionally, until vegetables are tender, about 10 minutes. Season with thyme, salt, and pepper.
Once barley is cooked, add it to the skillet with the vegetables. Stir in butter until melted. Mash the mixture with a potato masher to desired consistency.
Stir in Parmesan cheese if using. Adjust seasoning to taste. Serve warm.
Tips
For a vegan version, omit butter and Parmesan, or use plant-based alternatives.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of broth or water.
This mash pairs well with roasted meats or as a stuffing for bell peppers.
