1 bunch kale (about 10-12 ounces), stems removed and leaves chopped
2 tablespoons olive oil
4 cloves garlic, thinly sliced
1/4 teaspoon red pepper flakes (optional)
Salt to taste
1 tablespoon lemon juice (optional)
Instructions
Wash the kale thoroughly and dry well. Remove the tough stems and chop the leaves into bite-sized pieces.
Heat olive oil in a large skillet over medium heat. Add sliced garlic and red pepper flakes (if using) and cook for 30 seconds until fragrant, stirring constantly.
Add the kale to the skillet in batches if necessary. Cook, tossing with tongs, until the kale wilts and becomes tender, about 5-7 minutes.
