Ingredients
24 large white mushrooms (about 1 lb), stems removed and finely chopped
1 tablespoon olive oil
1/2 pound sweet Italian sausage, casings removed
1/4 cup finely chopped onion
2 cloves garlic, minced
1/3 cup dry breadcrumbs
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup chicken broth
Instructions
Preheat oven to 375°F (190°C). Lightly grease a baking sheet.
Heat olive oil in a skillet over medium heat. Add sausage, onion, and garlic; cook until sausage is browned and cooked through, breaking it up with a spoon, about 5-7 minutes. Stir in chopped mushroom stems and cook 2 minutes more.
Remove from heat. Stir in breadcrumbs, Parmesan, parsley, salt, and pepper until combined. Add chicken broth to moisten if needed.
Spoon filling into mushroom caps, mounding slightly. Arrange on prepared baking sheet.
Bake for 15-20 minutes until mushrooms are tender and tops are golden. Serve warm.
Tips
For a lighter version, use turkey sausage and low-fat cheese.
Can be prepared a day ahead; refrigerate unbaked and add 5 minutes to baking time.
