Ingredients
1 tbsp olive oil
1 lb sweet or hot Italian sausage links
2 bell peppers (any color), sliced into strips
1 large onion, sliced into half-moons
3 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp dried oregano
1/4 cup chicken broth or water
1 tbsp tomato paste (optional)
Instructions
Heat olive oil in a large skillet over medium-high heat. Add sausage links and cook, turning occasionally, until browned on all sides, about 5-7 minutes. Remove sausages to a plate and set aside.
In the same skillet, add bell peppers and onion. Cook, stirring occasionally, until softened and beginning to brown, about 5 minutes.
Add garlic, salt, pepper, and oregano. Cook for 1 minute until fragrant.
Stir in chicken broth and tomato paste (if using). Scrape up any browned bits from the bottom of the pan.
Return sausages to the skillet, nestling them among the peppers and onions. Reduce heat to medium-low, cover, and cook for 10-15 minutes until sausages are cooked through (internal temperature 160°F).
Uncover and cook for another 2-3 minutes to thicken the sauce slightly. Serve hot as a main dish or on crusty rolls.
