Ingredients
1 tablespoon olive oil
1 pound Italian sausage, casings removed
1 medium onion, chopped
3 cloves garlic, minced
1 (28-ounce) can crushed tomatoes
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
12 ounces dried pasta (such as penne or rigatoni)
1/4 cup grated Parmesan cheese
2 tablespoons fresh basil, chopped
Instructions
Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water, then drain.
While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add sausage and cook, breaking it up with a spoon, until browned, about 5 minutes.
Add onion and cook until softened, about 4 minutes. Stir in garlic and cook for 30 seconds.
Add crushed tomatoes, oregano, and red pepper flakes if using. Season with salt and pepper. Bring to a simmer, then reduce heat to low and cook for 10 minutes, stirring occasionally.
Add drained pasta to the skillet with the sauce. Toss to combine, adding reserved pasta water a little at a time if needed to loosen the sauce.
Serve topped with Parmesan cheese and fresh basil.

For a creamier sauce, stir in 1/4 cup heavy cream at the end.
