Ingredients
1 cup pancake mix
2 tablespoons maple syrup
1/2 cup water
2 frozen sausage patties
2 large eggs
2 slices American cheese
Butter for cooking
Instructions
In a bowl, combine pancake mix, maple syrup, and water until smooth. Let batter rest 2 minutes.
Cook sausage patties in a skillet over medium heat until browned and cooked through, about 4 minutes per side. Remove and keep warm.
In the same skillet, melt a little butter. Pour 1/4 cup batter per pancake into the skillet to make 4 small pancakes (about 3 inches wide). Cook until bubbles form on surface, then flip and cook until golden, about 2 minutes per side.
Fry eggs in the skillet with butter to your liking (over medium for a runny yolk is recommended). Season with salt and pepper.
Assemble: Place one pancake, then a sausage patty, then a slice of cheese, then an egg, and top with another pancake. Repeat for second sandwich.
Serve immediately.
Tips
For extra maple flavor, brush the pancakes with a little extra maple syrup before assembling.
You can use homemade pancake batter instead of mix.
