A classic Italian-American hoagie packed with juicy grilled sausages, sautéed peppers and onions, and melted provolone cheese, all tucked into a crusty roll.

Ingredients
4 Italian sausage links (sweet or hot)
2 tablespoons olive oil
1 large onion, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
4 hoagie rolls, split
4 slices provolone cheese
1/4 cup marinara sauce (optional)
Salt and black pepper to taste
Instructions
Preheat grill or grill pan to medium-high heat. Grill sausages, turning occasionally, until cooked through (internal temperature 160°F), about 12-15 minutes. Remove and set aside.
While sausages cook, heat olive oil in a large skillet over medium heat. Add onion and bell peppers; season with salt and pepper. Cook, stirring occasionally, until softened and lightly caramelized, about 10 minutes.
Split hoagie rolls and place them cut-side down on the grill or under the broiler for 1-2 minutes until lightly toasted.
Place a slice of provolone cheese on the bottom half of each roll. Top with a cooked sausage, then spoon the pepper and onion mixture over the sausage. Add a spoonful of marinara sauce if desired.
Close the hoagie with the top half of the roll and serve immediately.
Tips
For extra flavor, use a mix of sweet and hot sausages.
If you don't have a grill, you can pan-fry the sausages in a skillet with a little oil over medium heat until cooked through.
Serve with extra marinara sauce on the side for dipping.
