1 lb pork breakfast sausage
1/4 cup all-purpose flour
2 1/2 cups whole milk
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
Instructions
In a large skillet over medium heat, cook the sausage, breaking it into crumbles, until browned and cooked through, about 5-7 minutes.
Reduce heat to medium-low. Sprinkle the flour over the sausage and stir constantly for 1-2 minutes until the flour is absorbed.
Slowly pour in the milk while stirring continuously to prevent lumps. Increase heat to medium and bring to a gentle simmer.
Cook, stirring often, until the gravy thickens to your desired consistency, about 5-7 minutes. Season with salt, black pepper, and cayenne if using. Taste and adjust seasoning.
