Ingredients
1 lb pizza dough, at room temperature
1/2 lb ground pork sausage
2 tbsp all-purpose flour
1 1/2 cups whole milk
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp cayenne pepper (optional)
1 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1 tbsp olive oil
1 tbsp chopped fresh parsley (for garnish)
Instructions
Preheat oven to 475°F (245°C) with a pizza stone or inverted baking sheet inside.
In a skillet over medium heat, cook sausage, breaking it into crumbles, until browned and cooked through, about 5-7 minutes. Remove sausage with a slotted spoon and set aside, leaving about 1 tbsp drippings in the pan.
Reduce heat to medium-low. Whisk flour into the drippings and cook for 1 minute. Gradually whisk in milk, salt, pepper, and cayenne. Cook, stirring constantly, until thickened, about 3-4 minutes. Remove from heat.
On a floured surface, stretch or roll pizza dough into a 12-inch round. Transfer to a floured pizza peel or parchment paper.
Brush dough with olive oil. Spread the gravy evenly over the dough, leaving a 1-inch border. Sprinkle with mozzarella and cheddar, then scatter the cooked sausage on top.
Slide pizza onto the preheated stone or baking sheet. Bake until crust is golden and cheese is bubbly, 12-15 minutes.
Let cool for 2 minutes, then sprinkle with parsley. Slice and serve.
Tips
For extra flavor, use spicy breakfast sausage.
If the gravy thickens too much, thin with a splash of milk before spreading.
