Ingredients
1 lb bulk pork sausage
3 tbsp all-purpose flour
2 1/2 cups whole milk
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper (optional)
4 large buttermilk biscuits (homemade or store-bought)
Instructions
In a large skillet over medium heat, cook the sausage, breaking it into small pieces, until browned and cooked through, about 5-7 minutes.
Reduce heat to medium-low. Sprinkle the flour over the sausage and stir constantly for 1-2 minutes until the flour is fully incorporated and no white spots remain.
Slowly pour in the milk while stirring continuously. Increase heat to medium and bring the mixture to a gentle simmer, stirring often, until the gravy thickens, about 3-5 minutes.
Stir in salt, black pepper, and cayenne if using. Taste and adjust seasoning as needed.
Split the biscuits in half and place two halves on each plate. Ladle the sausage gravy generously over the biscuits. Serve immediately.
Tips
For extra richness, use half-and-half or a mix of milk and heavy cream.
Leftover gravy can be refrigerated for up to 3 days; reheat on the stovetop with a splash of milk.
If gravy becomes too thick, thin with a little more milk.
