Ingredients
1 lb bulk pork sausage
4 large eggs
4 slices cheddar cheese
4 buttermilk biscuits (homemade or store-bought)
1 tbsp butter
Salt and pepper to taste
Instructions
Divide sausage into 4 equal portions and shape into patties slightly larger than the biscuits.
Cook sausage patties in a large skillet over medium-high heat until browned and cooked through, about 4-5 minutes per side. Transfer to a plate and keep warm.
In the same skillet, reduce heat to medium and add butter. Crack eggs into the skillet, season with salt and pepper, and cook to desired doneness (sunny-side up or over-easy, about 3-4 minutes).
Split biscuits in half and toast if desired.
Assemble sandwiches: place a sausage patty on the bottom half of each biscuit, top with a slice of cheese, then a fried egg, and cover with the top half of the biscuit.
Serve immediately.
