Ingredients
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
6 tablespoons cold unsalted butter, cubed
3/4 cup cold buttermilk
1 pound bulk pork sausage
1 tablespoon butter, melted (for brushing)
Instructions
Preheat oven to 425°F. Line a baking sheet with parchment paper.
In a large bowl, whisk together flour, baking powder, salt, and baking soda. Cut in cold butter using a pastry blender or fingertips until mixture resembles coarse crumbs.
Make a well in the center and pour in buttermilk. Stir just until dough comes together. Turn onto a floured surface and gently knead 4-5 times.
Pat dough to 1/2-inch thickness. Cut out 4 biscuits using a 3-inch round cutter. Place on prepared baking sheet. Brush tops with melted butter.
Bake 12-14 minutes until golden brown. Cool on a wire rack.
While biscuits bake, form sausage into 4 patties slightly larger than biscuits. Cook in a skillet over medium heat until browned and cooked through, about 4-5 minutes per side.
Split biscuits in half and place a sausage patty on each bottom half. Top with biscuit tops and serve warm.
Tips
For extra flaky biscuits, freeze the butter and grate it into the flour.
