  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt. Cut in cold butter using a pastry blender or fingertips until mixture resembles coarse crumbs.
  3. Add buttermilk and stir just until dough comes together. Turn onto a floured surface and knead gently 4-5 times. Pat dough to 1/2-inch thickness and cut out 4 biscuits using a 3-inch round cutter. Place on prepared baking sheet. Bake for 12-14 minutes until golden brown.
  4. While biscuits bake, form sausage into 4 patties slightly larger than biscuits (they shrink). Cook in a skillet over medium-high heat for 4-5 minutes per side until browned and cooked through (internal temp 160°F/71°C).
  5. During last minute of cooking sausage, top each patty with a slice of cheese and cover pan to melt.
  6. Split biscuits in half. Place cheesy sausage patty on bottom half, top with biscuit top. Serve warm.
