Ingredients
1 lb (450g) baby potatoes, halved
1 tbsp olive oil
1 lb (450g) smoked sausage, sliced into 1/2-inch rounds
1/2 red onion, thinly sliced
2 tbsp apple cider vinegar
1 tbsp Dijon mustard
1/4 cup olive oil
2 tbsp fresh parsley, chopped
Salt and black pepper to taste
Instructions
Place potatoes in a pot, cover with salted water, and bring to a boil. Cook until tender, about 15 minutes. Drain and let cool slightly.
While potatoes cook, heat 1 tbsp olive oil in a large skillet over medium-high heat. Add sausage slices and cook until browned on both sides, about 5 minutes. Remove from skillet.
In a small bowl, whisk together apple cider vinegar, Dijon mustard, and 1/4 cup olive oil. Season with salt and pepper.
In a large bowl, combine cooked potatoes, sausage, red onion, and parsley. Pour dressing over and toss gently to coat.
Serve warm or at room temperature.
Tips
For a lighter version, use chicken sausage.
This salad can be made ahead and refrigerated; bring to room temperature before serving.
