Ingredients
1 tbsp olive oil
1 lb sweet Italian sausage links
1 lb hot Italian sausage links
2 bell peppers (1 red, 1 green), sliced into strips
1 large onion, sliced
3 cloves garlic, minced
1 can (14.5 oz) crushed tomatoes
1/2 cup chicken broth
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
4 hoagie rolls (optional, for serving)
Instructions
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add sausage links and cook until browned on all sides, about 5-7 minutes. Remove sausages and set aside.
In the same pot, add sliced peppers and onion. Cook, stirring occasionally, until softened, about 5 minutes. Add garlic and cook for 1 minute more.
Stir in crushed tomatoes, chicken broth, oregano, salt, and pepper. Return sausages to the pot, nestling them into the sauce.
Bring to a simmer, then reduce heat to low. Cover and cook for 20 minutes, until sausages are cooked through and flavors meld.
Serve sausages and peppers on hoagie rolls or over rice, spooning sauce on top.
Tips
For a milder dish, use all sweet Italian sausage.
