Ingredients
4 Italian sausage links (sweet or hot)
2 tablespoons olive oil
1 large yellow onion, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
3 cloves garlic, minced
1/2 teaspoon dried oregano
Salt and black pepper to taste
4 sub rolls, split
4 slices provolone cheese
Instructions
1. In a large skillet over medium heat, cook sausages in 1 tablespoon olive oil until browned on all sides and cooked through, about 12-15 minutes. Remove sausages and set aside.
2. In the same skillet, add remaining 1 tablespoon olive oil. Add onion and bell peppers; cook, stirring occasionally, until softened and lightly caramelized, about 8-10 minutes. Add garlic and oregano; cook 1 minute more. Season with salt and pepper.
3. Slice sausages in half lengthwise. Return sausages to skillet with peppers; toss to combine and heat through.
4. Preheat broiler. Place sub rolls cut-side up on a baking sheet. Divide sausage and pepper mixture among rolls. Top each with a slice of provolone.
5. Broil until cheese is melted and bubbly, about 2-3 minutes. Serve hot.
Tips
For extra flavor, use a mix of sweet and hot sausages.
Toast the sub rolls under the broiler before assembling if desired.
Leftover sausage and peppers can be refrigerated for up to 3 days and reheated.
