Ingredients
1 English muffin, split
1 large egg
1 sausage patty (about 2 oz, thawed if frozen)
1 slice American cheese
1 tablespoon butter, softened
Salt and pepper to taste
Instructions
1. Heat a non-stick skillet over medium heat. Add the sausage patty and cook for 3-4 minutes per side until browned and cooked through. Remove and keep warm.
2. In the same skillet, crack the egg and cook to your liking (sunny-side up or over-easy, about 2-3 minutes). Season with salt and pepper.
3. While the egg cooks, toast the English muffin halves. Spread butter on the cut sides.
4. Assemble the sandwich: Place the sausage patty on the bottom muffin half, top with the cooked egg, then the cheese slice. Cover with the top muffin half.
5. Serve immediately.
Tips
For a runny yolk, cook the egg sunny-side up; for a firmer yolk, cook over-easy or over-hard.
Substitute with turkey sausage or a vegetarian patty if desired.
Wrap the sandwich in foil for a portable breakfast on the go.
