Ingredients
1 lb breakfast sausage
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheddar cheese
1 cup milk
1/4 cup unsalted butter, melted
1 large egg
Instructions
Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin or line with paper liners.
In a skillet over medium heat, cook sausage, breaking it into crumbles, until browned and cooked through. Drain excess fat and set aside to cool slightly.
In a large bowl, whisk together flour, baking powder, salt, and pepper. Stir in shredded cheddar cheese and cooked sausage.
In a separate bowl, whisk together milk, melted butter, and egg. Pour into dry ingredients and stir just until combined (do not overmix).
Divide batter evenly among muffin cups, filling each about 3/4 full.
Bake for 18-20 minutes, or until golden brown and a toothpick inserted into center comes out clean.
