Ingredients
1 lb boneless chicken thighs, cut into 1-inch cubes
2 tbsp soy sauce
2 tbsp brown sugar
1 tbsp vegetable oil
1 clove garlic, minced
1 tsp ground coriander
1 tsp ground cumin
1/2 tsp turmeric
16 bamboo skewers, soaked in water for 30 minutes
For the peanut sauce: 1/2 cup creamy peanut butter
1/2 cup coconut milk
2 tbsp soy sauce
1 tbsp brown sugar
1 tbsp lime juice
1 tsp sambal oelek or chili paste
1 clove garlic, minced
Instructions
In a bowl, combine soy sauce, brown sugar, vegetable oil, minced garlic, coriander, cumin, and turmeric. Add chicken cubes and toss to coat. Marinate for at least 30 minutes.
Meanwhile, make the peanut sauce: In a small saucepan over medium heat, combine peanut butter, coconut milk, soy sauce, brown sugar, lime juice, sambal oelek, and garlic. Whisk until smooth and heated through. Set aside.
