Ingredients
1 can (3.75 oz / 106g) sardines in olive oil, drained
1 tablespoon lemon juice
1 tablespoon capers, drained and chopped
1 tablespoon fresh parsley, chopped
1 tablespoon extra-virgin olive oil
Salt and black pepper to taste
2 slices sourdough bread (1/2 inch thick)
1 clove garlic, halved
Instructions
In a small bowl, mash the sardines with a fork. Stir in lemon juice, capers, parsley, and olive oil. Season with salt and pepper to taste.
Toast the bread slices until golden and crisp. While still warm, rub one side of each toast with the cut side of the garlic clove.
Divide the sardine mixture evenly over the toasts, spreading to the edges. Serve immediately.
Tips
For extra crunch, add a few slices of radish or cucumber on top.
Can be served with a side salad for a more substantial meal.
If you prefer a milder flavor, use skinless, boneless sardines.
