Ingredients
2 lbs chicken wings, tips removed and separated into drumettes and flats
1 tablespoon vegetable oil
1 teaspoon salt
1 teaspoon ground white pepper
1/2 teaspoon black pepper
2 cloves garlic, minced
1 red chili, thinly sliced (optional)
1/4 cup cornstarch

Instructions
Pat chicken wings dry with paper towels. In a large bowl, toss wings with vegetable oil, salt, white pepper, and black pepper. Let marinate for 10 minutes.
Add cornstarch to the bowl and toss until wings are evenly coated.
Heat oil in a deep pot to 350°F (175°C). Fry wings in batches for 8-10 minutes until golden and cooked through. Drain on paper towels.
In a small pan, heat 1 tablespoon of oil over medium heat. Sauté garlic and chili until fragrant, about 30 seconds.
Toss fried wings with garlic-chili mixture. Serve immediately.
